In the U.K., we traditionally used large hot water boilers, which can hold and boil lots of water, thenretain it for a number of hours.

At the time, that was more economical.
The large vats of water were traditionally stored in squalid conditions. In the attic, or in a smaller area of the house, usually where folk don't normally venture.
As such, other animals typically tended to find these places nice to visit, what with them being deserted areas of a nice warm house, usually with a lot of nice warm pipes and a big giant vat full of heated water.

If you dared to open the lid on your water boiler, after decades of it not being looked into, you'd probably find at least one dead rat in there.

Us CRAZY Brits decided this probably wasn't safe water to drink, so instead did our plumbing and taps with two distinct sets of pipes.
One for hot. One for cold..
One for heated washes. The other safe for drinking.

... where's your water coming from?

Traditionally yes, but modern systems heat water on demand. However, we still use two taps, it is, indeed traditional. If we didn't, we'd have to buy new bath tubs and kitchen sinks etc.

Other oddities from the past.
The fuse in your plug comes because, during wartimes they couldn't afford to keep replacing the large pieces of metal in wall-fuses, so came up with a smaller version.

We kept them because they're handy.

When converting from "The tank" to combi-boilers, it was handy being a builder and working on revites (Council estates, refurbs etc etc), because we used to store the old tanks that were taken out, which was usually copper, then at the end of the job, weigh them in for beer tokens!
